Anzac Biscuits - CWA of Victoria Recipe

1 cup one-minute oats
1 cup self-raising flour
1 cup sugar
1 cup desiccated coconut
1 tbl golden syrup
125g butter
2 tbl boiling water
1 tsp bicarbonate soda

Mix dry ingredients, oats, sugar, flour and coconut in bowl.
Melt together butter, golden syrup and water in a separate bowl.
Add in bicarb soda to wet mix, stir until mixture foams. Add to dry ingredients, and mix well.
Place teaspoons of mixture on tray, leaving room to spread, bake in moderate oven until brown.
Cool on tray.
