All prize money will be paid when exhibits are collected.

REGULATIONS:
1.    ALL ENTRIES ARE SUBJECT TO THE BY-LAW REGULATIONS OF THE SOCIETY.
2.    PLEASE READ THE INSTRUCTIONS CAREFULLY.
3.    All exhibitors must bring each entry on a white disposable plate, suitable to the size of the entry, with the entry ticket firmly attached to the plate.
4.    Delivery and collection of exhibits:
       Delivery: Exhibits to be delivered to the Showgrounds on Thursday 26th October, only - between 8am and 9.45am.
       Collection: All exhibits will be available for collection on Monday, 30th October between 8am and 10.30am only. The Society will not accept responsibility for exhibits not collected during this time.
5.    Slices - each piece to be 3cm x 5cm in size. 
6.    CLASSES AA01, AA02 and AA04 to AA75 (inclusive) are open to individual entries only - excluding multiple group school entries. 
7.    No Packet mixes unless specified.

VAS Ltd Competitions Class AA02: VAS Ltd Carrot and Date Muffins

Entrants must be under 18 years on the day of the Show.

Use the following recipe.

INGREDIENTS:
2 1/2 cups self-raising flour    
1 tbsp orange marmalade
1 tsp ground cinnamon    
1 cup canola oil
1/4 tsp ground nutmeg    
2 eggs, lightly beaten
1 cup brown sugar (firmly packed)
3/4 cup orange juice
1 cup reduced fat milk
1/3 cup chopped pitted dates    
1 cup coarsely grated carrot

METHOD:
Preheat the oven to 190 degrees C (moderately hot).  Line a 12-hole muffin pan with round paper muffin cases - classic white muffin cases size (35mm height x 90mm wide x 50mm base).  Sift dry ingredients into a large bowl; stir in dates and carrots.  Then add the combined marmalade, oil, eggs, juice and milk.  Mix until just combined.  Spoon mixture evenly into muffin paper cases in muffin pan.  Cook for 20 minutes.  To test if muffins are cooked insert cake skewer.  If it comes out clean the muffins are ready.  Stand muffins in pan for 5 minutes before removing to cool.  Show Entries:  Four (4) muffins per plate.
